You heard me right. Goat Cheese + Mushroom on crusty toasted sourdough bread. Heaven. The only thing that could make it better…oh right some bright fresh herbs to balance the richness…but… oh my…it’s got that too?! Winning.
With this influx of making my own bread and being stuck at home due to Coronavirus I have been cranking out fun and satisfying breakfasts like it’s no ones’ business!
You can actually make the mushrooms ahead of time and heat them up quickly in the morning but really they don’t take too much time. To keep things simple I just mix my herbs, goat cheese and lemon in a bowl with a fork but if you want to get fancy you could whip it in a stand mixer.
I honestly just love mushrooms. As you may have noticed over the years here. I’m actually currently growing my own at home! Why not!? I’ll have to think up something really good for them once they are ready to harvest! Stay tuned for that and more breakfast toast recipes. I got a few more cooking (ha) in my drafts!
Herbed Goat Cheese Mushroom Toasts
- 1lb Mushrooms, sliced (any kind of you like, I used baby Bellas here)
- 3-4 Cloves Garlic
- juice from half a Lemon
- 4oz Goat Cheese
- 4 slices of your favorite crusty bread, toasted
- 1/2 tsp Dried Oregano
- 1/2 tsp Dried Thyme
- 1/2 tsp Dried Red Pepper Flakes
- 2 Tbsp Butter
- Salt and Pepper to taste
- Fresh Mint leaves (optional but suggested)
In a large skillet over medium to high heat melt butter. Add garlic and stir until aromatic (about 1 minute) and then add mushrooms. Season mushrooms with salt, pepper, and crushed red pepper. Don’t crowd your mushrooms, cook down until golden brown. I also will add a splash of lemon juice to deglaze the pan and give the mushrooms a little caramelized look at the end (optional).
In a small mixing bowl add your goat cheese, dried thyme, dried oregano, and lemon juice. Mix together quickly with a fork until combined, the goat cheese should be soft and spreadable.
Assemble by spreading the goat cheese on your toasted bread and top with the mushrooms. Garnish with additional salt and pepper if desired and fresh mint leaves!
