Tomato Risotto

Late summer/early fall is here and the tomatoes are plentiful! We don’t have as much of a large garden as we have in the past but we still snuck in a few tomato plants amongst our herbs and a few jalapeños. This recipe I tried last summer and it’s just so good with all those fresh ingredients. If you aren’t growing your own, like us, you can always skip down to your local farmers market or even a lot of grocery stores sell local fresh this time of year! But hurry quick tomato season is always plentiful but over in a flash!

Greek Cous Cous Salad

How is memorial day THIS weekend? I swear wasn’t it just March and we were told to stay home. This spring sure has sped by and I have 0 clues what I’ve done with my time. I’m kidding I’ve luckily gotten a lot done at home as with a new house- projects never end! Anyways if you are feeling me like lately…a little down in the kitchen area (read: lots of take-out because I’m too tired to unload the dishwasher) this Greek-style couscous salad is super easy to put together and packs quite the flavor punch! Extra points it looks super pretty too!

Lemon & Butter Salmon Foil Packs

Summer is so super busy for us this year. We have a lot going on. Even to the point where we barely have time to sit down for meal all together let alone even be home for dinner. I feel like nomads in our house. The garden is going well but honestly, hasn’t been as good as it could be (update soon!). We’ve been traveling and working on other projects that it’s been overtaken by some pests. Nothing too bad, we are still getting more than enough produce we want, just maybe not as visually pleasing. RIP CUCUMBERS.

Anyways, one of my favorite things to throw together on a busy summer night are these salmon foil packs. They take minutes to put together and require essentially no cooking skills or time. Just throw them in the oven or on the grill and –blam- done.
